Fermented juice recipe

INGREDIENTS:
- 500g organic lemons
- 1 tbsp grated ginger
- 125ml whey
- 75g organic cane sugar, plus ½ tbsp
- still mineral water, to top up
YOU’LL NEED:
- 3 sterilised glass bottles
- A sterilised 3 litre jar
The fermenting process should take four or five days. Once made, the fermented lemonade should be consumed within a week.
INSTRUCTIONS:
- Juice the lemons and filter through a sieve. Put the lemon juice, ginger, whey and sugar into a 3-litre sterilized jar and top up with mineral water, leaving 2.5cm free at the top
- Shake thoroughly and leave it at room temperature for 2 days, releasing gas regularly by opening the lid.
- After 2 days, pour the mixture into glass bottles, adding a little of the ½ tbsp sugar to each. Seal and ferment at room temperature for another 2-3 days (opening every day) until you see bubbles.
- Now it’s ready to be put in the fridge to stop any further fermentation. Enjoy the gut healthy lemonade within a week.
