INGREDIENTS:
- 350 g broccoli, frozen
- 300 g cauliflower, frozen
- 1/2 leek, copped
- 10 dl water
- 1/2 cup cashews
- 1 vegetable stock cube
- 1 tbsp oil
- herb salt
- 200 g asparagus
- oil, to fry
TOPPING: roasted almonds - green herb oil
INSTRUCTIONS:
- Put all the gut healthy ingredients in a saucepan. Let it boil for 10-15 min or until the green veggies and the cashews are soft.
- Fry the asparagus in some oil and salt until it’s golden.
- Mix the soup all together. Taste!
- Pour the amazing broth soup into bowls. Top with asparagus, roasted almonds & green herb oil. ENJOY!
