INGREDIENTS: 

  • 350 g broccoli, frozen
  • 300 g cauliflower, frozen
  • 1/2 leek, copped
  • 10 dl water
  • 1/2 cup cashews
  • 1 vegetable stock cube
  • 1 tbsp oil
  • herb salt
  • 200 g asparagus
  • oil, to fry

TOPPING: roasted almonds - green herb oil

 

INSTRUCTIONS: 

 

  1. Put all the gut healthy ingredients in a saucepan. Let it boil for 10-15 min or until the green veggies and the cashews are soft.

  2. Fry the asparagus in some oil and salt until it’s golden.

  3. Mix the soup all together. Taste!
     
  4. Pour the amazing broth soup into bowls. Top with asparagus, roasted almonds & green herb oil. ENJOY!
