Chia seeds – health benefits

Chia seeds may be tiny, but they are packed with nutrition. Rich in fibre, they support digestion and help you feel full longer. Chia seeds are also an excellent source of omega-3 fatty acids, antioxidants, and essential minerals like calcium, magnesium and iron.

 

Ingredients

 

  • 1 cup of coconut milk

  • 4 tbsp of chia seeds

  • 1 tsp of vanilla extract

  • 1 tsp of maple syrup

  • 10-15 strawberries
     

Instructions 

 

  • Pour coconut milk into a bowl. Add the chia seeds and the vanilla extract and stir well. 

  • Pour in the maple syrup. Stir and leave for five minutes, then stir again to keep the seeds from clumping up. 

  • Place in the fridge for one or two hours. 

  • It is time to make the compote. Put 2/3 of the strawberries in a saucepan with a tablespoon of water. 

  • Cook on low to medium heat and use a spoon to break down the berries. 

  • When the pudding is ready, layer it with the compote and top with some fresh strawberries.
