These rich and fudgy low-FODMAP brownies are the perfect gut-friendly sweet treat when you’re craving something chocolatey and comforting. Soft, gooey and naturally moist thanks to the hidden courgette, they’re made with simple ingredients chosen to feel a little gentler on digestion.
INGREDIENTS
- 150 g grated courgette
- 1 egg
- 50 g melted coconut oil
- 50 g coconut yoghurt
- Spices: 1 tsp vanilla sugar, 1 tsp cinnamon, 20 g cane sugar
- 1 tbsp cocoa powder
- 30 g rolled oats
- 30 g oat flour
- 40 g rice flour
- 1 tsp baking powder
- 70 ml oat milk
INSTRUCTIONS
- Mix wet ingredients
- Add dry ingredients
- Gradually pour in oat milk
- Bake at 180°C (350°F) for ~45 min
- Let cool before slicing
